There are tons of vegan cheese sauce recipes on the internet. And this is the way we like it. Feel free to switch up the ingredients and make this recipe uniquely yours!
Before we get started, please know that this recipe works best with a high powered blender. If you don't have one though, just take your time. You can always make a recipe work with what you have on hand!
1 C white potatoes, peeled and cubed
1/2 C carrots, peeled and cubed
1/4 C onion, peeled and quartered
2 tbsp vegetable oil
1/4 C nondairy milk / cooking liquid
2 tsp lemon juice
1 tsp vinegar
1 tsp corn starch (or flour)
1 tbsp garlic powder
1 tbsp onion powder
1/4 cup nutritional yeast
1/2 tsp sea salt
1. Boil potatoes, carrots and onions until potatoes and carrots are soft.
2. Remove from the water and add to a blender as soon as they get soft. Don't let them boil for too long or the cheese sauce won't come out smooth at the end.
3. Add the cooking liquid and remaining ingredients and blend until smooth and delicious.
If you want to make this "queso" style, like we do here in Texas, dice onions, tomatoes, and chilies. Combine in a bowl the cheese sauce and top with cilantro.
