Seasoned "Beef" Seitan

Seitan is a great meat replacement. Discovered by Buddhist monks thousands of years ago, you can find Vital Wheat Gluten (VWG) today at most any grocery store and use it to make tasty, protein rich seitan!


Seitan is so delicious, versatile and can be used to replace nearly any meat. Today we're making a staple in The Hippie Haus, seasoned "beef" seitain.

Let your imagination run wild when making seitan!


As with all recipes, please use this as a base. Change the seasonings to match your preference and what you have on hand.

Remember, if your dish is delicious, then you made it right!


  • 2 cups vital wheat gluten (VWG)

  • 1 tbsp onion powder

  • 1 tbsp garlic powder

  • 1 tbsp dried basil

  • 1 tbsp dried oregano

  • 1 tbsp salt-free seasoning

  • 1 tbsp soy sauce

  • 1 tsp salt

  • 1 tsp vinegar

  • 1 tsp ginger

  • 1 cayenne

  • 2 tbsp ketchup / tomato paste

  • 1/4 cup toasted nooch

  • 1 cup water / broth

  • 5 bay leaves

  • 1/4 sliced onion

  1. Add VWG to a medium size bowl and combine with remaining dry ingredients.

  2. Mix wet ingredients in small bowl.

  3. Add wet ingredients to dry small amount at a time. VWG will come together like a dough ball and you want to mix until right when there are no more dry ingredients.

  4. Set seitan ball aside for 10 minutes while you prepare the cooking liquid.

  5. Add bay leaves and sliced onion to a large stock pot and fill about half way with water.

  6. While pot is boiling separate seitan into desired shapes. We usually make 2-4 seitan steaks and form the remaining dough into meatballs.

  7. Once seitan is shaped, reduce stock pot to a simmer and add seitan. Keep the cooking liquid at a simmer and cook for 45 minutes.

  8. Once cooked, remove seitan from boiling liquid. You can cook the seitan immediately (we like to cook the seitan steaks in vegan butter and garlic) or you can store them in the cooking liquid until you are ready to eat.
